White Truffle & Parmesan Grilled Zucchini
Light, elegant, and packed with flavour which makes it the perfect side dish. Grilled until tender and finished with parmesan and a drizzle of white truffle oil, it’s simple luxury on a plate.
INGREDIENTS:
2 medium zucchinis, sliced lengthwise
1 tbsp olive oil
Salt and black pepper, to taste
2 tbsp grated parmesan
1–2 tsp white truffle oil
Optional: fresh parsley, for garnish
METHOD:
1. Brush zucchini slices with olive oil and season with salt and pepper.
2. Grill over medium heat for 3–4 minutes per side, until tender with grill marks.
3. Transfer to a plate, sprinkle with parmesan, and drizzle with white truffle oil.
4. Garnish with parsley if desired. Serve warm and enjoy the delicate, earthy flavour
