Smoky, spicy, and seriously satisfying! This brings bold flavour to every bite. Perfect served chilled or at room temp, it’s a punchy side or light lunch that’s anything but boring.

INGREDIENTS:

250g pasta (penne, fusilli, or bowties)
½ cup cherry tomatoes, halved
¼ cup sliced olives (green or black)
¼ red onion, thinly sliced
2 tbsp Manuka Smoked Chili Olive Oil
1 tbsp apple cider vinegar or lemon juice
Salt and black pepper, to taste
Fresh parsley or basil, chopped

METHOD:

1. Cook pasta until al dente. Drain, rinse with cold water, and set aside.
2. In a large bowl, combine pasta, tomatoes, olives, and red onion.
3. Drizzle with Manuka Smoked Chili Olive Oil and vinegar or lemon juice. Toss well to coat.
4. Season with salt, pepper, and fresh herbs. Chill before serving or enjoy right away.
