Spooky Stuffed Mushrooms

 

Earthy, smoky, and devilishly delicious. These bite-sized mushrooms are filled with a creamy, garlicky mixture and elevated with the bold, savoury flavour of Kiwi Artisan Manuka Wood Smoked Olives. They’re the perfect eerie appetizer for your Halloween spread — easy to make, hauntingly good to eat.

INGREDIENTS

  • 12 medium brown mushrooms, stems removed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 100g cream cheese, softened
  • 2 tbsp Kiwi Artisan Manuka Wood Smoked Olives, whole and finely chopped
  • 1 tbsp mixed herbs (such as parsley, thyme, or chives), chopped
  • Salt and pepper, to taste
  • capsicum for garnish

 

METHOD

  1. Preheat the oven to 180°C and line a baking tray.
  2. Heat olive oil in a pan and sauté the garlic until fragrant. Remove from the heat and allow to cool slightly.
  3. In a bowl, combine the cream cheese, chopped Manuka Smoked Olives, herbs, and the sautéed garlic. Season with salt and pepper to taste.
  4. Spoon the filling into the mushroom caps and arrange them on the tray.
  5. Bake for 12–15 minutes, or until the mushrooms are tender and the filling is golden on top.
