Spicy Chilli Olive Nachos with Bacon

Smoky, cheesy, and loaded with flavour - this will take the classic up a notch. Gooey cheese, bold olives, and crispy bacon come together with a fiery chilli kick for the ultimate sharing platter.

INGREDIENTS:
1 large bag tortilla chips
1 cup shredded cheese (cheddar, mozzarella, or a mix)
½ cup sliced Kiwi Artisan Olives (flavour of your choice)
4 strips bacon, cooked and crumbled
1–2 tbsp Spicy Chilli Oil (plus more for drizzling)
½ cup diced tomatoes
¼ cup sliced red onion
1 fresh chilli, sliced (optional for extra heat)
Salt and pepper, to taste

GARNISH:
Fresh coriander
Sour cream or guacamole

METHOD:
Preheat oven to 200°C (400°F). Spread tortilla chips on a baking tray.

Top evenly with cheese, olives, tomatoes, onion, and crumbled bacon. Drizzle lightly with spicy chilli oil.

Bake for 8–10 minutes, until cheese melts and bacon crisps further.

Remove from oven, add fresh chilli slices if desired, and garnish with coriander.

Serve hot with sour cream or guacamole for dipping.
